Flavored Pumpkin Seeds 

Megan Moeller is a freshman nursing major. When asked about a recipe she loves and a tradition that went along with the recipe, Megan’s blue eyes lit up. She describes how every year during Thanksgiving, her family would go to a pumpkin patch in her hometown and then select their favorite pumpkin and a stencil to carve it with. When her family carved the pumpkins, they always set aside the pumpkin seeds to roast and eat later. Her family uses many seasonings on the pumpkin seeds, but Megan’s favorite is cinnamon and sugar. This is one of her favorite traditions because it produces a lot of laughter, and she gets to enjoy the flavored pumpkin seeds.   

Ingredients 

  • Pumpkin seeds 
  • 2 teaspoons olive oil 
  • Salt 
  • Garlic 
  • Turmeric 
  • Onion powder  
  • Cinnamon 
  • Sugar 

Step 1 

Heat oven to 350° F. 

Step 2 

Cut the top of the pumpkin open and scrape out pumpkin guts. Separate seeds and guts. Put the pumpkin seeds in a strainer and run under cold water to rinse off.  

Step 3 

Dry pumpkin seeds and toss with oil in a bowl. Spread out on a pan and sprinkle desired seasoning over top.  

Step 4 

Put in the oven and bake for 15–20 minutes.  

Homemade Applesauce 

Natalie LeClair is a freshman English major. In the fall, her and her mom always go to an apple orchard and bring home apples to make applesauce. While Natalie was home over fall break, she brought back apples to make her mom’s homemade applesauce. On a brisk fall evening when the leaves are changing, Natalie loves to cuddle up with a book and enjoy some warm homemade applesauce.  

Ingredients 

  • Gala and Fuji apples  
  • Sugar  
  • Cinnamon  

Step 1 

Peel and slice as many apples as you think you will want to eat. 

Step 2 

Add the apples to a pot of water and cook them down until they form a sauce-like substance. 

Step 3 

Add cinnamon and sugar to taste. 

Original NESTLÉ Chocolate Chip Cookies 

Elissa Magnuson is a freshman nursing major. Her favorite fall recipe is the Original NESTLÉ TOLL HOUSE Chocolate Chip Cookies that her mom makes. As a little kid, she remembers coming home after a long, tiring school day and smelling the sweet aroma of chocolate chip cookies that had just come out of the oven. When she goes home to visit from college, her mom will always make her chocolate chip cookies. 

Ingredients 

  • 2 1/4 cups all-purpose flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon salt 
  • 1 cup (2 sticks) butter, softened 
  • 3/4 cup granulated sugar 
  • 3/4 cup packed brown sugar 
  • 1 teaspoon vanilla extract 
  • 2 large eggs 
  • 2 cups (12-ounce package) chocolate chips
  • 1 cup chopped nuts (optional) 

Step 1 

Preheat the oven to 375° F.  

Step 2 

Combine the flour, baking soda and salt in a small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.  

Step 3 

Bake for 9–11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
